PENENTUAN DIFUSIVITAS BETA KAROTEN DALAM BERBAGAI PELARUT PADA EKSTRAKSI MASERASI LABU KUNING

Abstract


Betakaroten merupakan jenis senyawa bioaktif yang memiliki manfaat besar bagi kesehatan karena kandungan antioksidan yang tinggi. Betakaroten dapat diisolasi dari berbagai jenis sayur dan buah-buahan kuning. Tujuan penelitian ini adalah untuk mengetahui pengaruh perbedaan pelarut terhadap nilai difusivitas betakaroten dari labu kuning. Isolasi dilakukan dengan teknik ekstraksi maserasi konvensional selama 48 jam dengan tiga jenis pelarut yang berbeda yaitu aseton, dietil eter, dan campuran aseton dengan dietil eter (24:1). Pelarut mempengaruhi difusivitas senyawa bioaktif yang terekstrak. Didapatkan nilai DA sebesar 0,0009; 0,0057; dan 0,0052 m2/menit pada masing-masing pelarut dietil eter, aseton, dan campuran aseton:dietil eter. Hasil akhir konsentrasi betakaroten yang didapatkan pada masing-masing pelarut sebesar 121,218; 124,369; dan 129,654 mol/liter. Nilai konstanta kecepatan esktraksi yang menunjukkan kecepatan kelarutan sampai dengan kondisi setimbang (k) diperoleh sebesar 0,0021; 0,0036; dan 0,0035 m/menit. Dalam hal ini nilai dari konstanta kesetimbangan ekstraksi (K) pada masing-masing tidak berbeda, berada pada nilai 0,9000.
