Studi Literatur: Manfaat Serat dan Pati Resisten terhadap Kesehatan Metabolik

Abstract


Gangguan metabolisme mulai banyak terjadi pada penderita obesitas. Di Indonesia, obesitas meningkat setiap tahunnya hingga mencapai 21,8 persen. Tingginya angka obesitas diduga akan meningkatkan prevalensi penyakit tidak menular sehingga diperlukan solusi untuk memperlambat perkembangannya melalui pola makan tinggi serat dan pati resisten. Tujuan: Untuk meninjau beberapa literatur mengenai efek metabolik dari konsumsi serat dan pati resisten pada manusia. Metode penelitian ini adalah studi literatur dilakukan pada bulan September dan Oktober 2023. Kata kunci yang digunakan adalah pati resisten, serat, obesitas, diabetes melitus, kadar trigliserida, dan resistensi insulin. Kriteria inklusi yang digunakan antara lain artikel tahun 2013-2023, manusia obesitas dan/atau penderita diabetes melitus, menggunakan bahasa Inggris, diberikan intervensi berupa serat atau pati resisten, berdampak pada kesehatan. Hasil review dari 177 artikel diperoleh 10 artikel yang menunjukkan bahwa intervensi serat dan pati resisten dapat meningkatkan efek metabolik baik glukosa darah postprandial, profil lipid, sensitivitas insulin dan inflamasi. Kesimpulan Serat dan pati resisten dapat direkomendasikan sebagai strategi pencegahan dan pengobatan obesitas, dan penyakit tidak menular khususnya diabetes melitus.
